Chef Creations, a food factory headquartered in Culinary Concepts, Orlando, Fla., pioneered the aseptic packaging of egg yolk lemon curd and custard in the United States.
The 32 ounce lemon sauce is packaged in Tetra Pak's Tetra Pak brick boxes, with a shelf life of up to one year in a non-refrigerated environment. The main customers are hotels, hotels and entertainment centers. After opening, the sauce has a cold storage period of 7 days. Due to the use of Tetra Pak's ReCap3 polyethylene sealing cap, the carton can be sealed repeatedly. The packaging box uses thick paper, polyethylene and aluminum foil and other materials, and consists of six layers. The outermost cardboard is printed in 5-color flexo printing.
The company also plans to bring these two kinds of condiments to the retail market, but the egg yolk lemon sauce may be made into a 500-ml package. “We also sent our samples to the Middle East, Asia and the Caribbean,†said Hal Valdes, president of Culinary Concepts. “The shelf life of carton packs allows us to do this.†The company will also introduce several new seasonings in the near future. The sterile bag replaces the 1 gallon bag of custard that needs to be refrigerated. “From the packaging point of view, the cost of a sterile bag is 2.5 to 3 times more expensive,†Valdes said. “We decided to use it, mainly for its convenience, durability, and storage at room temperature before opening. Aseptic packaging in distribution In the process, no refrigerated space is occupied because the transport at room temperature eliminates the cost of cold transport, so the freight is much lower than in the original bag.â€
Valdes said: “Customers love carton packaging because they can enjoy the quality of the product and recognize its convenience, durability and safety, especially for foods like egg yoghurt and lemon curd that are made from fresh eggs.†Valdes also mentioned the past. The bagged lemon sauce needs to be manually used, and the use of carton packs eliminates manual labor.
